Step 1: Preheat the oven to 400°F. In a large skillet over medium heat, cook 1 lb ground beef, breaking it up, until no longer pink.

Step 2: Reduce heat to low and drain excess grease. Sprinkle in 2 tablespoons taco seasoning and stir. Keep heat low and if the mixture looks dry, stir in 2 tablespoons water.

Step 3: Heat ½ cup vegetable or canola oil in a medium skillet over medium-high heat. Test the oil by dipping a tiny edge of a tortilla—if it bubbles immediately the oil is hot. Fry each corn tortilla: 20 seconds on the first side, 10 seconds after flipping, then fold in half and transfer to a paper towel–lined cookie sheet. Repeat with remaining tortillas.

Step 4: Remove paper towels and arrange the shells so one side lies flat. Add a few tablespoons of beef and a sprinkle of shredded cheddar to each shell. Bake 4–6 minutes at 400°F until the cheese is melted and gooey.
