Stir-Fried Beef with Ginger-Oyster Sauce

This stir-fried beef with ginger-oyster sauce is a simple, flavorful weeknight meal adapted from a mushroom-based recipe. I swap the portobello mushrooms for thinly sliced sirloin (or sometimes chicken) and use a bag of pre-cut stir-fry vegetables to save time. The combination of oyster sauce, soy, and toasted sesame oil gives the dish a savory depth while garlic and ground ginger add brightness. Serve over steamed jasmine rice for a complete meal.

Ingredients

Glaze

2 Tbsp soy sauce

2 Tbsp sugar

1/4 cup low-sodium chicken broth or vegetable broth

Sauce

1 Tbsp soy sauce

1 cup low-sodium chicken broth or vegetable broth

3 Tbsp oyster sauce

2 tsp toasted sesame oil

1 Tbsp cornstarch

Vegetables & Aromatics

2 medium cloves garlic, minced (about 2 tsp)

1 tsp ground ginger

1/2–1 Tbsp + 3 tsp vegetable oil (divided for searing and stir-frying)

1 pound sirloin, patted dry and sliced thinly across the grain (or 1 lb boneless skinless chicken breast, cut into strips)

1 bag pre-cut stir-fry vegetables (separate longer-cooking vegetables, like broccoli, from quicker-cooking ones)

Instructions

Combine glaze ingredients in a small bowl and whisk until sugar dissolves. In a separate small bowl, whisk together the sauce ingredients and cornstarch until smooth and set aside. In a third small bowl, mix the minced garlic and ground ginger with 1 teaspoon of vegetable oil; set aside.

Heat 1/2 Tbsp oil in a large skillet or wok over medium–medium-high heat. Add the sliced beef (or chicken) in a single layer and cook, stirring occasionally, until browned and cooked through, about 8–12 minutes for beef depending on thickness. If excess liquid collects, drain it so the meat browns instead of steaming. Transfer the cooked meat to a plate and keep warm.

Wipe the skillet if needed and heat 1 teaspoon vegetable oil over medium–high heat until shimmering. Add the longer-cooking vegetables (for example, broccoli or thicker carrots) and stir-fry until they begin to brown, about 1–2 minutes. Add 1/2 cup broth, cover, and cook until just tender, another 2–3 minutes. Uncover and continue cooking until the liquid has mostly evaporated, about 30 seconds. Remove these vegetables to the plate with the meat.

Heat the remaining 1 teaspoon vegetable oil in the skillet over medium–high heat. Add the quicker-cooking vegetables from the bag and stir-fry until they start to brown and soften, 1–2 minutes. If using leafy greens, add them now and stir frequently until wilted, about 1 minute.

Push the vegetables to the sides of the skillet to clear the center. Add the garlic-ginger oil mixture to the center and cook briefly, mashing with a spoon or spatula, until fragrant, about 15–20 seconds. Stir the garlic and ginger into the vegetables.

Return the browned meat and any reserved vegetables to the skillet. Pour in the prepared sauce and toss to combine. Cook, stirring, until the sauce thickens and evenly coats the meat and vegetables, about 2–3 minutes. Taste and adjust seasoning if needed. Transfer to a serving platter and serve immediately over steamed rice.

Longer- and Quicker-Cooking Vegetables

When you use a pre-cut stir-fry mix, separate vegetables that need more cooking time (like broccoli, cauliflower, asparagus, or green beans) from those that cook quickly (like bell pepper, snow peas, celery, zucchini). Cooking them in stages ensures even doneness and preserves texture.

Notes and Tips

If you prefer a vegetarian version, replace the meat with portobello mushrooms or extra-firm tofu and use vegetable broth. The ginger-oyster-style sauce (use vegetarian oyster sauce if needed) still provides great flavor.

Pat the meat dry before slicing and searing to encourage browning. If slices are too thick, slice them thinner across the grain for a more tender bite.

Control sauce thickness by adjusting the cornstarch: dissolve cornstarch completely in the cold broth before adding to the skillet to avoid lumps.

Toast whole sesame seeds or add a few drops of toasted sesame oil at the end to boost aroma. Use sparingly—its flavor is concentrated.

Serve with jasmine rice or steamed rice to soak up the savory sauce and complete the meal.

If you suspect you have a sensitivity to gluten or notice you don’t feel your best after eating it, you’re not alone. Many people experience non-celiac gluten sensitivity (NCGS). I’m one of them. While I don’t have celiac disease, reducing gluten has made a noticeable difference in how I feel day to day.

Gluten is a protein found in grains such as wheat, barley and rye. It’s what helps bread, pasta and many baked goods keep their structure and chewiness. For some people, though, this same protein can trigger symptoms and worsen certain health issues. If you experience any of the following, gluten may be a contributing factor:

Frequent bloating, gas, stomach pain, or other digestive problems

Inflammatory bowel conditions such as IBD, IBS, Crohn’s disease, or ulcerative colitis

Autoimmune disorders

Thyroid issues like hypothyroidism or Hashimoto’s thyroiditis

Hormonal conditions such as polycystic ovary syndrome (PCOS)

Skin problems including psoriasis, alopecia areata, or chronic hives

Mood disorders such as depression or anxiety

Ongoing headaches, persistent fatigue, or brain fog

I loved gluten — like many people, I grew up on bread, pasta and baked treats — but when I began struggling with PCOS and autoimmune symptoms, I realized my gut health was affecting my overall quality of life. To figure out what foods were causing problems, I tried an elimination diet similar to the Clean-in-15 approach. I removed common triggers, including gluten, and paid close attention to how my body responded.

About ten days after cutting out gluten and other likely culprits, the changes were remarkable. My energy levels improved, bloating decreased, and the urticaria flare-ups that had plagued me calmed down. That experience marked the beginning of a longer healing process. During the reintroduction phase of the elimination diet, I confirmed that gluten was a clear trigger for me. Admitting that was difficult — anyone who loves bread and pasta knows it can feel like a big sacrifice. For a while it seemed impossible to give those foods up indefinitely.

Over time, though, I learned to balance my choices. I now follow a mostly gluten-free diet but allow occasional gluten-containing foods when I know my body can tolerate them. This flexible approach helps me enjoy special meals without undoing the progress I’ve made with my gut health. If you’re considering an elimination diet, it’s helpful to keep notes on symptoms and consult a healthcare professional, especially if you have an autoimmune condition or complex health concerns.

Nowadays, the market offers many gluten-free products, but not all are created equal. Some are made primarily from highly processed starches, additives, or ingredients that may still irritate the gut. Finding products that use real, minimal ingredients and still taste good can be a real challenge. That’s why I’m excited about brands that focus on simple, whole-food ingredients in their gluten-free lines. Good alternatives let you enjoy familiar flavors while staying committed to healing and overall wellness.

Choosing better gluten-free options helps support digestion, reduce inflammation, and make it easier to maintain a nourishing, balanced diet. Whether you suspect NCGS, are managing an autoimmune condition, or simply want to experiment with a cleaner way of eating, a thoughtful, evidence-based approach can make the transition smoother and more sustainable.

CRANBERRY PECAN GOAT CHEESE BALLS – a quick, elegant, and irresistibly delicious holiday appetizer. These bite-sized cheese balls are perfect for Christmas gatherings, New Year’s Eve parties, or any festive occasion where you want an easy yet impressive starter.

If you need a fresh appetizer idea that comes together in minutes, these Cranberry Pecan Goat Cheese Balls are ideal. They combine creamy goat cheese and cream cheese with warm cinnamon, sweet honey, crunchy pecans, tart dried cranberries, and bright parsley to create a balanced, festive flavor profile. They’re easy to prepare, store well, and travel nicely for potlucks and parties.

Holiday entertaining often benefits from dishes that can be made ahead, and these cheese balls check that box. They’re rich and indulgent without being heavy, and the texture contrast between the soft cheese center and the crunchy coating makes them especially satisfying. Whether you serve them as an appetizer before a large dinner or set them out as part of a grazing board, they look beautiful and taste even better.

These little cheese balls are designed to be shared. Each one is the perfect size for topping a cracker, an apple slice, or a pretzel. They’re visually appealing too—the red cranberries, green parsley, and golden-brown pecans create a colorful, festive presentation. Because much of the prep can be done in advance, you’ll have less to do when guests arrive and more time to enjoy the celebration.

The flavor combination is simple but elegant: tangy goat cheese and creamy cream cheese mellowed by honey, warmed with a hint of cinnamon, and studded with chopped pecans. The coating of diced dried cranberries, additional pecans, and minced fresh parsley adds brightness, texture, and a holiday-ready look. These are the kind of small bites that disappear fast at any event.

How to make them: start by blending the cheeses with cinnamon, honey, and chopped pecans until smooth and well combined. Portion the mixture using a small cookie scoop or spoon, then roll each portion into a compact ball. In a separate shallow bowl mix the diced dried cranberries, finely chopped pecans, and minced fresh parsley. Roll each cheese ball in the mixture so it’s evenly coated, then transfer to a serving plate and chill until ready to serve. The chilling helps the balls firm up and allows the flavors to meld.

You can prepare these up to two or three days ahead and store them in an airtight container in the refrigerator. When serving, arrange them on a platter with an assortment of crackers, sliced apples, pretzels, or crusty bread. They also pair well with charcuterie elements like prosciutto or a selection of olives and pickles for a fuller appetizer spread.

These Cranberry Pecan Goat Cheese Balls are an inviting, colorful, and flavorful addition to any seasonal menu. They’re approachable to make, elegant on the table, and loved by guests of all ages. Try them this holiday season for an appetizer that’s as pleasing to the eye as it is to the palate. Enjoy!

Butter or Ghee

Starting your day with a source of healthy fat can be a gentle, sustaining way to fuel your body. Adding a small pat of grass-fed butter or a spoonful of ghee to your coffee creates a smooth, creamy texture and delivers beneficial fat-soluble nutrients. Grass-fed options typically contain higher amounts of antioxidants and omega-3 fatty acids, and the added fat can help promote steadier energy and support balanced blood sugar levels throughout the morning.

MCT Oil

Medium-chain triglyceride (MCT) oil is a popular and versatile coffee addition, even for people who are not following a strict ketogenic diet. MCTs are rapidly absorbed and converted into usable energy, which can help with mental clarity, focus, and a steady energy boost without the crash that sometimes follows sugary or carb-heavy breakfasts. If you want to experiment, start with a small amount and increase gradually to see how it affects your energy and digestion.

Mineral Salt

A tiny pinch of mineral-rich salt can enhance flavor and reduce bitterness in black coffee while also contributing trace minerals and electrolytes. This can be especially helpful if you are adjusting to the taste of black coffee or if you want to support fluid balance on busy mornings. Use a high-quality mineral salt sparingly to avoid over-salting, and you may find the cup tastes smoother and more rounded.

Cinnamon

Cinnamon is a warm, aromatic spice that pairs beautifully with coffee. Beyond its flavor, cinnamon brings antioxidant properties and a pleasant sweetness that can reduce the need for added sugars. It is commonly used to support digestion and may help stabilize blood sugar responses after eating. A dash of ground cinnamon or a cinnamon stick steeped in your brew adds depth and comfort to your morning routine.

Collagen

Collagen powder is a tasteless, easily dissolvable protein supplement that blends into hot coffee without changing texture or flavor. It supplies key amino acids that support skin, hair, nails, and connective tissues, and it can also contribute to daily protein intake—useful for anyone aiming to maintain muscle mass and tissue repair as they age. Adding a scoop of collagen to your coffee is a simple way to include supportive nutrients with no fuss.

Turmeric

Turmeric, the golden spice celebrated for centuries in traditional cuisines, can be a bright, warming addition to coffee. Its active compound, curcumin, is associated with antioxidant and anti-inflammatory effects. A small pinch of ground turmeric or a well-blended turmeric latte-style mix can lend a subtle earthy flavor and a striking golden color to your cup. Pair turmeric with a dash of black pepper to enhance absorption if you like a stronger effect.

Cacao

Raw cacao brings the taste of chocolate along with a supply of antioxidants and subtle mood-supporting compounds. Stirring a teaspoon of raw cacao into your coffee creates a homemade mocha that feels indulgent while still offering potential cognitive and anti-inflammatory benefits. Choose unsweetened cacao powder to control sweetness and combine it with your preferred sweetener if desired.

Adaptogens

Adaptogens are plant- and mushroom-based ingredients that help the body respond to physical and mental stress. Popular options that blend well with coffee include ashwagandha, maca, reishi, chaga, and lion’s mane. Each has different traditional uses—some aim to support calm and resilience, others focus on mental clarity or gentle energy. If you’re new to adaptogens, try a small amount or opt for a reputable pre-blended coffee enhancer that combines complementary ingredients for convenience and consistent flavor.

Experimenting with one or two of these add-ins at a time can help you discover what suits your taste and supports your mornings best. Whether you choose fat for sustained energy, spices for flavor and antioxidants, protein for structural support, or adaptogens for resilience, these simple additions can transform your daily coffee into a more nourishing ritual.

These no-bake peanut butter protein bars are simple, tasty, and wholesome. A blend of protein powder, peanut butter, honey, oats, and peanuts makes a nourishing snack or quick meal you can take with you. They’re easy to prepare, portable, and satisfy both hunger and cravings.

I enjoy baking treats, but I also like keeping everyday options relatively healthy. When life gets busy, it helps to have portable, nutritious snacks on hand. These peanut butter protein bars are one of my go-to recipes because they combine satisfying flavor with balanced nutrition, and they travel well in a bag or lunchbox.

No Bake Peanut Butter Protein Bars

These bars are made by combining peanut butter, rolled or quick oats, and protein powder for a mix of healthy fats, complex carbohydrates, and protein. Peanuts add crunch while honey provides natural sweetness. After mixing, chill the bars until firm, then slice and enjoy. The process is straightforward and requires no baking—just stirring, pressing, and chilling.

Why You’ll Love This Recipe

Uses only a handful of common ingredients.

Provides a balanced, nutrient-dense snack.

Has an indulgent taste despite being wholesome.

Works well as an on-the-go meal, a between-meal snack, or a pre-workout bite.

Ingredients

This recipe calls for five main ingredients plus a couple of optional items. If you don’t already have protein powder, most grocery and big-box stores carry a variety of options.

2 1/4 cups quick cooking oats (or old-fashioned rolled oats for a chewier texture)

2 scoops vanilla protein powder (about a scant 1/2 cup)

3/4 to 1 cup smooth peanut butter (start with 3/4 cup; natural or conventional both work)

1/2 cup honey (for a vegan option use maple syrup, agave, or brown rice syrup; adjust amount if the liquid is thinner)

1/8 teaspoon fine salt

1 tablespoon coconut oil (optional, helps with texture)

1/2 cup peanuts, salted or unsalted, for topping and crunch

How to Make No Bake Peanut Butter Protein Bars

Preparation is quick and requires no oven. Follow these simple steps:

Line an 8 x 8 or 9 x 9-inch square pan with parchment paper, leaving an overhang on two sides for easy removal.

In a large microwave-safe bowl, combine the peanut butter, honey, and coconut oil. Heat about 45 seconds, then stir until smooth. If needed, microwave an additional 15–20 seconds.

Add the oats, protein powder, and salt to the peanut butter mixture. Stir until evenly combined. If the mixture feels too dry, add a little more peanut butter, a touch of honey, or a tablespoon of cold water at a time. It won’t be extremely sticky.

Press the mixture firmly into the prepared pan in an even layer, using a spatula or clean damp hands.

Sprinkle the peanuts over the top and gently press them into the surface so they adhere.

Refrigerate for at least 4 hours or until the bars are firm.

Lift the set mixture from the pan using the parchment overhang, transfer to a cutting board, and slice into 8 bars.

Substitutions and Variations

Swap the protein powder for your preferred type—whey, casein, plant-based, or blended.

Use almond butter or another nut butter for a different flavor, or seed butter for a nut-free version.

Choose chunky peanut butter if you’d like extra texture.

Sprinkle chocolate chips on top before chilling, or use chocolate protein powder for a chocolate-peanut butter bar.

Use rolled oats for chewier bars or quick oats for a smoother texture.

Equipment

8 x 8 or 9 x 9 square pan

Measuring cups

Mixing bowl and spatula

Knife for cutting

Storage

Refrigerator: Store in an airtight container for up to one week.

Freezer: Wrap individual bars and store in a freezer-safe container or bag for up to two months. Thaw in the refrigerator overnight or on the counter for a few hours.

Serving Suggestions

These bars are ideal for a handheld snack, but they also make a quick breakfast when paired with fresh fruit and a glass of milk or a cup of coffee.

Tips

If mixing is difficult, use clean damp hands to combine the ingredients.

Smooth peanut butter mixes more uniformly than chunky, but either will work.

Press the mixture firmly into the pan to create dense bars that hold together well.

Gently press the peanuts into the top so they stay in place but don’t sink completely.

FAQ

Are these bars healthy? Yes. They combine healthy fats from peanut butter and peanuts, complex carbs from oats, and added protein from the powder.

Should they be refrigerated? Yes, refrigeration keeps them firm and extends shelf life.

Can I use any protein powder? Absolutely. Use the type that suits your taste and dietary needs.

These ultra-thick, soft, chewy molded gingerbread cookies are warmly spiced, made with fresh ginger and bright orange zest, and filled with a sticky jam center. Pressed into wooden cookie molds and finished with a simple orange glaze, the jam and glaze keep the cookies moist and tender for days, making them ideal to prepare ahead for the holidays. The recipe draws inspiration from Eastern European spiced honey cookies, while offering a thick, more substantial texture than typical cut-out gingerbread.

🎅 Why you’ll LOVE this recipe

Thick, soft, gingerbread cookies: These cookies are much thicker than classic gingerbread—expect a tender, slightly chewy interior and a substantial bite.

Jam-filled surprise: Each cookie hides a small dollop of jam in the center. Apricot jam pairs beautifully with the spice and orange, but other high-quality jams or marmalades will work too.

Fresh ginger and orange zest: Grated fresh ginger and orange zest add lively, bright notes that balance the warm spices.

Wooden cookie molds: This recipe is perfect for using carved wooden cookie molds to create charming, detailed cookies.

📝 Key ingredients

Read these notes for success before you start. Full ingredient amounts and steps are in the recipe card below.

Molasses: Use unsulphured molasses for the best gingerbread flavor and color.

Ginger: Fresh grated ginger adds a bright, zingy heat. Ground ginger works as a substitute if needed; fresh will be more lively.

Orange: Grated orange zest brings a festive citrus lift. Use the squeezed juice for the glaze to tie the flavors together.

All-purpose flour: For consistent results, weigh the flour if possible. If measuring by volume, spoon and level rather than packing the cup.

Cinnamon, cloves, cardamom: These spices give the classic gingerbread warmth. Cardamom is optional but adds an aromatic note that pairs really well with orange and ginger.

Brown and granulated sugar: A mix of sugars balances sweetness and helps the cookies remain tender.

Butter: Unsalted butter is preferred. This recipe uses a relatively small amount of butter so the cookies hold their molded shapes and don’t spread excessively in the oven.

Apricot jam: Apricot is a lovely match for the spices and orange, but orange marmalade or another thick jam will also work. Choose a true jam rather than a thin fruit spread to avoid leaking and to keep the filling thick and glossy.

Step 5: Press the dough together into a disc, wrap tightly, and refrigerate for at least 20 minutes or up to overnight. Preheat the oven to 355°F (180°C) while the dough chills.

Step 7: Press a small piece of dough into the mold, working it into the crevices with your fingers. Leave a shallow well in the center for the jam.

Step 8: Spoon roughly a teaspoon of jam into the center of each molded cavity. A thick jam prevents excessive spreading or dripping while baking.

Step 9: Flatten another small piece of dough and place it on top to seal the jam. Trim excess dough at the edges. A little jam seeping out is normal and bakes up nicely.

Step 10: Gently push the dough inward along the mold edges, flip the mold, and ease the shaped cookie out. If your mold is shallow, trim any excess dough for a neat edge.

Step 11: Chill the prepared cookies briefly to help them hold their detail during baking. Arrange on a parchment-lined sheet with 1–2 inches between cookies; they will puff up. Bake for about 12 minutes until puffed and lightly golden. As they cool they will settle and regain the molded details.

Step 12: Whisk powdered sugar with freshly squeezed orange juice until the glaze is medium-thick and falls from the whisk in a thin ribbon. Brush the glaze into the crevices and over the tops of warm or cooled cookies. Brushing the underside will help lock in moisture if you plan to store or gift the cookies.

Allow the glaze to set for 10–20 minutes. Serve immediately or store in an airtight container. These cookies tend to soften and taste even better after a day as the flavors meld.

✔️ Expert molded gingerbread cookie tips

Keep dough and cookies chilled: Chilled dough is easier to press into molds and helps maintain detail during baking.

Be patient with unmolding: Use plenty of flour and gently press the dough inward along the mold edges to coax shapes free without tearing.

Choose a thick, high-quality jam: Real jam or marmalade will hold up best and give a glossy, chewy center; avoid thin fruit spreads.

Avoid overbaking: Bake until just puffed and lightly golden—the cookies should be tender, not hard.

🥄 Make ahead and storage

Store these molded gingerbread cookies in a sealed container at room temperature for up to five days; they soften and their flavor deepens with time. Refrigerate for up to one week or freeze in an airtight container for up to two months. When freezing, layer sheets of parchment between cookies to prevent sticking and preserve their shape.

How to gift these cookies for the holidays

These cookies make a lovely, eye-catching gift. They benefit from sitting a day sealed at room temperature, which helps textures mellow and flavors meld. Because they puff up during baking, a single molded cookie makes a generous statement in a cookie box. Package individually in heat-sealed bags, resealable bags, or small boxes with tissue, and label the cookie with the flavor and date for best presentation and freshness.

Cookie molds for gingerbread cookies

Use wooden cookie molds with deep grooves for clearer detail and easier filling. Deeper molds are simpler to fill with jam and yield more pronounced patterns. If you only have a cookie stamp, you can still adapt the technique: roll two thin rounds of dough, stamp one, add a teaspoon of jam to the other, then place the stamped round on top and cut with a cookie cutter to seal the filling inside.

📖 Recipe FAQs

Will jam leak if the edges aren’t perfectly sealed?

A little jam may seep during baking but it usually bakes in place and doesn’t make a mess like a free-form tart. Try to seal the edges as best you can, and use a thicker jam to minimize leakage.

Can I make these gluten free?

This recipe has not been extensively tested gluten free, but substituting a 1:1 gluten-free all-purpose flour blend is a reasonable starting point. Results may vary depending on the blend used.

Do these cookies spread during baking?

Yes, the cookies will puff and spread slightly while baking, which reduces some fine detail. They collapse a bit as they cool and regain their molded appearance. Give each cookie space on the baking sheet to accommodate puffing.

Fresh versus ground ginger — which should I use?

Fresh grated ginger delivers a brighter, sharper zing compared with ground ginger. Use fresh if you want that lively ginger punch; ground ginger works fine if fresh is unavailable.

Thick Gingerbread Molded Cookies with Jam Filling

Ultra-thick, soft and chewy molded gingerbread cookies spiced with fresh ginger and orange zest, filled with jam and glazed with orange icing. The jam and glaze keep the cookies moist for days, making them perfect for holiday baking and gifting.

Prep Time: 1 hr

Cook Time: 12 mins

Chill Time: 30 mins

Total Time: 1 hr 42 mins

Servings: 10 large cookies

Ingredients

Gingerbread Cookie Dough

1/3 cup butter, softened

1/4 cup granulated sugar

1/2 cup dark brown sugar

1 large egg, room temperature

1/2 cup unsulphured molasses

1 tablespoon pure vanilla extract

1/4 teaspoon sea salt

1 tablespoon fresh grated ginger or powdered ginger

Zest of 1 orange

1 tablespoon ground cinnamon

1/2 teaspoon ground cardamom

1/2 teaspoon ground cloves

1/4 teaspoon ground nutmeg

3 1/2 cups all-purpose flour (about 420 g)

1/2 teaspoon baking soda

1 cup jam (apricot recommended)

Orange glaze

1 cup powdered sugar

2–3 tablespoons freshly squeezed orange juice (from the zested orange)

Instructions

Gingerbread cookie dough

Cream butter with granulated and brown sugars until combined. It may appear crumbly; that’s normal.

Add the egg and beat until thick and creamy.

Mix in molasses, vanilla, salt, ginger, orange zest, cinnamon, cardamom, cloves, and nutmeg until smooth.

Fold in flour and baking soda until a crumbly dough forms. Press into a disc, wrap, and chill at least 20 minutes or overnight. Preheat oven to 355°F (180°C) while dough chills.

Grease and lightly flour wooden molds. Press dough into molds, leaving a small well in the center for jam.

Add about 1 teaspoon of jam to each well. Cover with a thin piece of dough and trim excess. Chill shaped cookies briefly for better definition.

Arrange on a parchment-lined baking sheet with 1–2 inches between cookies and bake 12 minutes, until puffed and slightly golden on the bottom. Allow to cool and settle to regain detail.

Orange glaze

Whisk powdered sugar with orange juice until the glaze is medium-thick and ribbons off the whisk. If too thick, you will lose detail on the cookies; if too thin, it will obscure the texture.

Brush glaze over warm or cooled cookies so it settles into the crevices. Brush the underside if you plan to store or gift the cookies to help retain moisture.

Let the glaze set 10–20 minutes. Store cookies in an airtight container; they often taste even better the next day.

Nutrition (approx.)

Calories: 486 kcal per large cookie; carbohydrates and sugar content will be significant due to molasses and jam. Adjust portion size as needed.

Today’s plantain and sausage breakfast casserole is a smart, satisfying way to get a nutritious, balanced breakfast on the table—especially when you want something you can prep ahead and reheat during a busy week.

I’m always hunting for breakfasts that meet a few needs: make-ahead convenience, hearty flavor, and simple prep. Casseroles check all those boxes—this plantain and sausage version does, too. It pairs starchy, caramelized plantains with savory, crispy breakfast sausage and a custardy egg layer to create a complete meal.

This casserole is a great candidate for weekend meal prep. The sausage and plantains require a bit of upfront cooking, but the steps are straightforward. Once assembled and baked, the casserole stores well in the refrigerator and reheats nicely for several days. It also freezes well in portions, making it handy for breakfasts on demand.

Start with a couple of pounds of your favorite breakfast sausage. Brown it in a large skillet over medium-high heat until it gets crispy and releases some fat. Remove the browned sausage with a slotted spoon and set it aside. Peel the plantains and slice them into roughly 1/2-inch discs. Use the rendered sausage fat to pan-fry the plantain slices until they’re golden brown on both sides—this builds flavor and keeps the casserole from becoming soggy.

Arrange the cooked plantain rounds in a single layer across the bottom of a 9×13-inch casserole dish. Scatter the browned sausage over the plantains, then pour a batch of whisked eggs evenly over the top. I season the egg mixture with a little fine sea salt, cracked black pepper, and dried oregano for a subtle herb note, but you can adjust seasonings to your taste.

The plantains supply the starchy component while the eggs and sausage deliver protein and fat, so a modest side of leafy greens or a piece of fruit makes this a balanced breakfast plate. The texture is pleasing: tender, slightly sweet plantains, savory sausage, and a firm, custard-like egg layer.

Choosing plantains: most grocery store plantains arrive green to yellow. Green or yellow plantains are starchier and less sweet than fully ripe brown plantains. Unlike bananas, a fully brown plantain is not spoiled—it’s simply riper and will be sweeter and softer when cooked. For this casserole, I prefer using ripe, sweeter plantains, so I often let yellow plantains sit at room temperature for a few days until brown spots appear. If you prefer a more savory base, use less-ripe plantains; the recipe steps remain the same, and the final dish will be less sweet.

Ingredients

2 pounds breakfast sausage (use your preferred variety)

3 ripe plantains, peeled and cut into 1/2-inch thick discs

12 eggs, whisked

1/2 teaspoon fine sea salt

1/4 teaspoon cracked black pepper

2 teaspoons dried oregano

Instructions

Preheat the oven to 350°F (175°C).

In a large skillet over medium-high heat, brown the breakfast sausage, breaking it into pieces with a spoon as it cooks. Cook until it becomes crispy and releases a good amount of fat. Transfer the browned sausage to a bowl, leaving the grease in the pan.

Reduce heat to medium. Add a single layer of sliced plantains to the skillet and cook 3–6 minutes per side, until each side is golden brown. Work in batches if needed so the pan remains hot and the plantains caramelize rather than steam.

Arrange the cooked plantain slices in an even layer across the bottom of a 9×13-inch casserole dish.

Spread the browned sausage evenly over the plantains. Pour the whisked eggs over the sausage and plantains. Sprinkle the salt, pepper, and dried oregano on top.

Bake for 20–25 minutes at 350°F, until the center is set. If the casserole still jiggles in the center, bake a few minutes longer.

Remove from the oven and let cool for about 5 minutes. Slice into portions and serve warm.

Enjoy! Store leftovers covered in the refrigerator for up to 4 days or freeze individual portions for longer storage.

Tips & Variations

If you prefer a more herb-forward flavor, stir a tablespoon of chopped fresh parsley or cilantro into the eggs before pouring.

For a milder dish, use pork or turkey sausage with lower spice levels. For more heat, choose a spicy sausage or add red pepper flakes to the eggs.

To freeze: cool the casserole completely, cut into portions, wrap tightly, and freeze up to 3 months. Reheat in the oven or microwave until hot throughout.

Serve with a simple green salad, sautéed greens, or fresh fruit to round out the meal.

The Ultimate Cozy Comfort Food

A top comfort-food pick, chicken pot pie with biscuits is a hearty, warming, and satisfying dish that serves as a complete meal — no sides required. The buttery, flaky biscuit topping makes the whole dish extra comforting and family-friendly.

What’s to Love

Great for planning ahead. Make the filling and biscuit dough in advance, refrigerate them separately, and simply assemble and bake when you’re ready.

A full meal in one pot. The recipe includes protein, vegetables, and biscuits all together for an easy, satisfying dinner.

Made from scratch. While pre-made biscuit dough can be used in a pinch, this version is designed for homemade biscuits for the best texture and flavor.

Flexible. Swap vegetables, use a different dairy or non-dairy milk in place of cream, or substitute leftover turkey or rotisserie chicken.

This dish carries a lot of nostalgic comfort for many cooks — a warm, savory meal ideal for cool evenings. It’s simple to adapt and forgiving, making it a great weeknight staple.

What You Need

Here’s a quick overview of the main components and why they matter for a well-balanced pot pie:

Biscuit dough: A simple biscuit dough made with flour, baking powder, a touch of sugar, salt, cold butter, and milk or buttermilk produces a flaky, tender topping.

Chicken: Use pre-cooked chicken — shredded rotisserie chicken, leftover roasted chicken, or cooked breasts. Turkey can also be used if preferred.

Vegetables: Onion, diced potatoes (small dice so they cook quickly), chopped carrots, and frozen mixed vegetables give the filling body and color.

Roux base: Butter and flour are cooked briefly to create a roux that thickens the filling and adds a rich, rounded flavor.

Broth and cream: Chicken broth provides savory depth while a splash of heavy cream (or half-and-half/milk for a lighter finish) adds a smooth texture to the sauce.

Seasonings: Salt, pepper, smoked paprika, ground mustard, and a pinch of dried thyme balance and elevate the flavors.

How to Make Chicken Pot Pie with Biscuits

Make the Biscuits

A food processor speeds up the biscuit dough process and keeps things tidy, but you can also mix by hand. The goal is to keep the butter cold so the biscuits bake up flaky.

Combine dry ingredients. Mix flour, baking powder, sugar, and salt until well blended.

Cut in cold butter. Add very cold butter and work it in until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining.

Add the milk. Stir or pulse until the dough just comes together; avoid overmixing.

Chill briefly. Form the dough into a disk, wrap, and refrigerate while you prepare the filling so it’s easier to cut into biscuits.

SAM’S TIP: Sourdough or other biscuit variations can be used if you prefer a tangy or different-flavored topping.

Make the Pot-Pie Filling

Sauté aromatics. Melt butter in a large pot or Dutch oven, then add diced onion and cook until translucent.

Make the roux. Stir in flour and cook briefly to toast the flour, then add salt, pepper, smoked paprika, ground mustard, and thyme.

Add liquids and vegetables. Slowly whisk in chicken broth and cream, add diced potatoes, chopped carrots, and frozen mixed vegetables, then simmer until the potatoes and carrots are tender and the sauce has thickened.

Stir in chicken. Remove from heat and fold in shredded or diced cooked chicken so it’s evenly distributed.

This creates a thick, savory filling similar in flavor to classic pot pie but with a bit more body to support the biscuit topping.

Assemble and Cook

Cut the biscuits. Roll or pat the chilled dough to about 1″ thick, then cut into rounds or squares. Press straight down rather than sawing to ensure the biscuits rise evenly.

Top the filling. Arrange biscuit pieces over the hot filling with a little space between them. Brush with an egg wash (egg whisked with a teaspoon of water) if you want a golden top.

Bake. Transfer the pot or Dutch oven to a preheated 400°F (205°C) oven and bake until the biscuits are cooked through and lightly golden, about 25 minutes. Test a biscuit center with a knife to ensure it’s not doughy.

The aroma while this bakes is irresistible — savory, warm, and inviting.

Frequently Asked Questions

Can I make this in advance?

Yes. Store biscuits and filling separately in airtight containers in the refrigerator for up to 2 days. When ready to bake, assemble and allow a few extra minutes in the oven if starting from chilled.

Can I use a classic pie crust instead of biscuits?

Yes. Prepare a pie crust, chill it while you make the filling, then roll it out and place it over the filling. Vent the top and bake until the crust is golden and the filling is bubbling.

Can I bake this in a pie dish?

This recipe yields a generous amount of filling that fits best in a large pot or Dutch oven. It may be possible to split between two pie dishes if you prefer.

Tips for Making Chicken Pot Pie with Biscuits

Make components ahead. Prepare the filling and biscuit dough up to two days in advance for an easy assembly night.

Substitute store-bought biscuits if needed. Unbaked canned biscuits can be used in a pinch.

Swap dairy as desired. Half-and-half, whole milk, or a nut milk can replace heavy cream for a lighter consistency; the filling will be slightly thinner.

Customize vegetables. Use sweet potatoes, lima beans, peas, or other vegetables you prefer — the recipe is forgiving.

Enjoy this cozy, satisfying chicken pot pie with biscuits. It’s a reliable weeknight meal and a wonderful way to use leftover chicken while keeping dinner warm and comforting.

For Egg Wash (optional)

1 large egg

1 teaspoon water

Instructions

Biscuit Topping

Preheat oven to 400°F (205°C).

Combine flour, baking powder, sugar, and salt in a bowl or food processor. Scatter cold butter over the mixture and pulse or cut in until the mixture resembles coarse crumbs. Add milk and mix just until the dough clumps.

Serve hot and enjoy.

Notes

Alternative topping

If you prefer a classic pie crust, prepare a chilled pie crust and roll it out to place over the filling. Vent the top and bake as directed. You can also divide the filling between two pie plates if needed.

Food processor alternative

If you don’t have a food processor, whisk dry ingredients, use a pastry cutter or two knives to cut in the butter, and then stir in the milk until combined.

Potatoes

Russet potatoes are recommended for texture, but Yukon gold or other varieties work well too. Dice smaller than 1″ so they cook through while simmering the filling.

Making in advance

Store biscuits and filling separately in airtight containers for up to 2 days in the refrigerator. Assemble and bake when ready; chilled components may require a few extra minutes in the oven.

Storing

Refrigerate leftovers in an airtight container for up to 4 days. This dish also freezes well for up to 3 months; thaw overnight in the fridge before reheating.

Gluten-free note

This version uses wheat flour. Some cooks have had success substituting a 1:1 gluten-free cup-for-cup flour blend, but results may vary.

If you want to grow your blog, here are five types of posts that can help you increase traffic quickly and attract a loyal audience.

At one point I assumed writing about my daily meals would make hordes of readers rush to my blog. It turned out that’s not how it works. People visit and return when you give them something useful.

The posts that drive traffic are simple, actionable and focused on solving a real, burning problem for readers.

Readers come for solutions, not self-indulgent updates.

The Key To Creating Viral Posts

Viral posts begin with strong content. Useful, clear and well-structured writing keeps first-time visitors coming back and encourages sharing. Good grammar matters: correct punctuation, varied wording, and careful keyword use make your posts more readable and more likely to rank.

If you struggle to spot your own mistakes, use an editor or writing tool to help you catch errors and improve clarity. When you batch content, a second set of eyes—or a writing tool—helps a lot.

5 Types Of Blog Posts To Grow Your Blog Traffic

Here are five effective post formats to publish regularly. Mix these into your content plan to attract different kinds of readers and keep traffic growing.

1. Lists

List posts perform well because they promise multiple solutions. Readers like options: if one item doesn’t fit their needs, another might. That makes list posts inherently useful and clickable.

For example, a list titled “10 free stock photo sites” draws people searching for images because it’s likely to include at least one resource they haven’t tried.

Tip: Focus lists on actionable ideas rather than abstract facts. A list that directly addresses a problem will get more shares and clicks.

Examples of compelling list posts:

Foods to eat to lose weight

Tips to grow your blog traffic

Quick ways to make money short-term

Essentials for a newborn

Products or remedies to clear acne

Things to do when you’re bored or down

2. Roundups

Roundups collect helpful resources—articles, videos, tools, or courses—that solve a specific problem. They’re a curated shortcut for readers who want trusted options in one place.

Personal experience roundups—like workouts you’ve tried or recipes you love—are especially effective because they combine curation with authenticity.

Roundup examples:

15 healthy vegan dinner recipes

10 workouts that help build core strength

6 simple home organization tips

9 bloggers share how they earn $5,000+ per month

20 motivational quotes to keep you moving

3. Ultimate Guide

An ultimate guide is an in-depth resource that teaches everything a reader needs to know about a topic. It’s comprehensive and organized so the reader doesn’t need to search elsewhere.

For example, an ultimate guide to Pinterest traffic would cover setting up a business profile, designing pins that convert, scheduling strategies, alt text, and analytics—step by step and with examples. These guides are time-consuming to create, but they attract steady traffic for years when done well.

Ultimate guides are cornerstone content: they establish authority and provide long-term SEO value.

4. How-To / Step-by-Step (incl. Recipe / Workout)

How-to posts meet an immediate need. People frequently search for tutorials, recipes, and workouts—so detailed, actionable instructions perform consistently well.

Keep steps clear and easy to follow. Use simple language, break tasks into manageable parts, and include timing, tools, and common pitfalls to avoid.

The goal of a how-to post is to help the reader accomplish something concrete by the end.

A simple, quick recipe I posted—ten-minute tomato basil quinoa—became popular because it was easy, fast, and delicious. Practical value is what readers remember and share.

5. Personal Journey / Transformation / Experience

Personal stories and case studies resonate because they show real results. Readers trust honest accounts from people who tried something and reported what worked and what didn’t.

When writing personal posts, be transparent and helpful. Share specific details, timelines, challenges, and the practical steps you took. If a product or tool helped, mention it clearly—but focus on the experience and outcomes.

Examples of effective personal posts:

How I lost 20 pounds by walking every day

How I made $40 in one hour with freelance work

I went vegan for a month: here’s what happened

Those five post types—lists, roundups, ultimate guides, how-tos, and honest personal reports—cover a wide range of reader needs. Rotate them in your content calendar, aim to solve real problems, and make every article actionable and easy to share. If you have other formats that work well for you, try them and see which resonate most with your audience.

If you want a dependable chocolate crinkle cookie that holds its shape, bakes evenly, and delivers deep chocolate flavor without complicated techniques, this version will quickly become a go-to.

Ingredient notes

Unsweetened baking chocolate: Provides concentrated chocolate flavor and, paired with shortening, creates the fudgy interior these cookies are known for.

Shortening: Reduces spreading and helps keep a soft center while giving crisp edges.

Eggs, room temperature: Blend smoothly into the batter and add structure and lift.

Granulated sugar: Sweetens the dough and helps develop the crackled surface during baking.

Vanilla extract: Enhances and balances the chocolate aroma and flavor.

All-purpose flour: Two cups provide the right structure without drying the dough.

Baking powder: Essential for rise and the signature cracks on top.

Salt: Enhances the chocolate flavor and balances sweetness.

Confectioners’ sugar: Used to coat the chilled dough balls to create the classic powdered exterior.

Optional additions: A tablespoon of brown sugar for extra chew or a pinch of espresso powder to deepen the chocolate notes.

How to make chocolate crinkle cookies

Step one: Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper or lightly grease them so the cookies release easily.

Step two: In a small saucepan over low heat, melt the chopped unsweetened baking chocolate together with the shortening, stirring until smooth. Remove from the heat and let it cool for about 20 minutes so it doesn’t cook the eggs in the next step.

Step three: In a large mixing bowl, beat the room-temperature eggs and granulated sugar on medium speed for 2 to 3 minutes until the mixture is pale and slightly fluffy. Stir in the vanilla, then add the cooled chocolate-shortening mixture and mix until fully combined.

Step four: Whisk the all-purpose flour, baking powder, and salt in a separate bowl. Fold the dry ingredients into the chocolate mixture and stir until a sticky, thick dough comes together.

Step five: Cover the dough and chill it in the refrigerator for at least 3 hours, or overnight. Chilling firms the dough so the cookies puff and crack instead of spreading flat.

Step six: Put confectioners’ sugar in a shallow bowl. Use a cookie scoop or tablespoon to portion the chilled dough into 1-inch balls, then roll each ball generously in the powdered sugar. Arrange the coated dough balls about 2 inches apart on the prepared baking sheets.

Step seven: Bake for 10 minutes, or until the edges have set but the centers still look soft—this ensures a fudgy interior. Remove from the oven and transfer cookies to a wire rack to cool completely.

Tips for the best chewy chocolate crinkle cookies

Chill thoroughly: Well-chilled dough yields taller cookies with better cracks.

Use a cookie scoop: Evenly sized dough balls bake more consistently.

Roll generously in powdered sugar: A thick coating produces more dramatic white cracks.

Avoid overbaking: Pull the cookies when edges are set; the centers firm as they cool.

Measure flour correctly: Spoon and level flour to prevent a dry, dense dough.

Add espresso powder if desired: A small pinch deepens the chocolate taste without making them taste like coffee.

Parchment paper is your friend: It prevents sticking and helps cookies brown evenly on the bottom.

Keep dough covered: Prevents drying while chilling and preserves moisture for a fudgier result.

Room-temperature eggs: Blend more smoothly and support lift during baking.

Bake on the center rack: Provides even heat so edges don’t overcook faster than the centers.

Substitutions and variations

Gluten-free: Substitute with a 1:1 gluten-free flour blend for a gluten-free version.

Cake mix shortcut: A chocolate cake mix can be used for a quicker method, though the result will be slightly less fudgy.

Extra chocolate: Fold in chocolate chips for double-chocolate crinkle cookies.

Richer flavor: Add a tablespoon of unsweetened cocoa powder or a pinch more espresso powder for extra depth.

Festive touches: Stir in crushed peppermint, orange zest, or a few sprinkles for holiday variations.

Storage

Room temperature: Store fully cooled cookies in an airtight container for up to five days. The powdered sugar coating will remain attractive if kept dry.

Refrigerator: Optional—cookies will keep up to one week when chilled in an airtight container.

Freezer: Freeze baked cookies in a freezer-safe container for up to three months. Thaw on a cooling rack at room temperature to maintain texture.

Freeze the dough: Shape dough into 1-inch balls and freeze them on a tray until firm. Transfer to a freezer bag and roll in confectioners’ sugar just before baking for freshly baked cookies on demand.

Freezing prepared dough is a great time-saver during busy holidays—bake only what you need and enjoy warm cookies any time.

Frequently asked questions

Why are my chocolate crinkle cookies flat?

Flat cookies most often result from insufficient chilling. Chilling firms the dough so cookies rise and crack rather than spread.

Why didn’t my crinkle cookies crack?

Not enough leavening or too much flour can prevent the lift needed for cracked tops. Make sure you measure ingredients properly and include the baking powder.

Can I use cocoa powder instead of melted chocolate?

Melted chocolate contributes to the cookies’ fudgy texture and flavor. Cocoa powder alone will yield a different texture—denser and less glossy—but can be used if adjusted with additional fat.

Can I freeze chocolate crinkle cookies?

Yes. You can freeze either baked cookies or the dough balls. For best results, freeze dough balls solid on a tray, then transfer to a sealed bag. Roll in confectioners’ sugar before baking.

Can I double the recipe?

Yes. When doubling, use multiple baking sheets spaced properly to avoid overcrowding and ensure even baking.

These Chocolate Crinkle Cookies combine melted chocolate, basic pantry ingredients, and a crucial chill to deliver chewy, fudgy cookies with striking crackled tops. They work well for holiday cookie swaps, gifts, and any time you want a crowd-pleasing chocolate treat.
