You might be surprised to learn that your immersion circulator needs cleaning — but it does, just not very often. The good news: cleaning it is simple and quick.

If you’re unfamiliar with immersion circulators, they’re the device used for sous vide cooking. For a basic primer on sous vide, check other resources to get started.
Some guides show how to disassemble a circulator for a deep clean. For most home users that’s unnecessary and sometimes not feasible. This article gives a safe, easy method that works for common consumer units such as Breville Joule, Anova (including the Nano), and similar models. If you own a larger commercial unit from brands like PolyScience, follow the manufacturer’s care instructions instead.
How often do I need to clean my circulator?
With normal use and proper handling, you won’t need to clean your circulator frequently. Proper maintenance means not leaving it running in the same water for long stretches. Clean your circulator in these cases:
- Routine maintenance: about every 6 months. A practical schedule is to clean in April and October, which often comes before busier cooking seasons.
- After a major spill or leak during a cook. If a vacuum bag fails, a jar cracks, or something leaks into the water bath (sweet or sticky foods like cheesecake are common culprits), it’s a good time for a cleaning.

Ingredients
- Large jar or pitcher
- White vinegar
- Water
- Dish towel
Instructions
-
Choose a container deep enough for the circulator to operate freely, such as a large mason jar, pitcher, small cooler, or tall food storage container.
-
Place the circulator in the container. Pour equal parts water and white vinegar until the liquid level reaches just above the circulator’s fill line.
-
Set the circulator to 150°F (65°C) and run it for 1 hour. The warm vinegar solution helps dissolve mineral deposits and residue.
-
Remove the circulator from the container. If you like, gently wash the exterior with warm water and dish soap, then rinse thoroughly.
-
Return the circulator to the container and refill with plain water to just above the fill line.
-
Run the circulator at 150°F (65°C) for 30 minutes to flush out any remaining vinegar and loosened deposits.
-
Remove the circulator and dry it completely with a clean dish towel before storing.
