Ingredients
1 large tub cottage cheese
1 large tub whipped topping (Cool Whip)
1 cup maraschino cherries, drained and halved
1 large can chunk pineapple, drained and chopped if desired
1 large package miniature marshmallows
1 package (6-ounce) dry Jell‑O, any flavor
Method
In a large mixing bowl, combine the cottage cheese and whipped topping until smooth and evenly blended. Fold in the maraschino cherries, drained pineapple and miniature marshmallows, mixing gently so the fruit and marshmallows are distributed throughout the mixture.
Sprinkle the dry 6‑ounce Jell‑O powder evenly over the top of the mixture. Stir thoroughly until the gelatin powder is fully incorporated and no dry powder remains. For a layered or multi-flavor variation, divide the cottage cheese mixture into two bowls and add a different flavor of Jell‑O to each portion, stirring each separately.
Cover the bowl and refrigerate for at least an hour to allow the flavors to meld and the texture to set slightly. Serve chilled as a refreshing dessert or a sweet side dish for picnics and potlucks. Store leftovers refrigerated in a sealed container for up to three days.
