How to make

  3. In a smaller bowl, whisk together the granulated sugar, melted coconut oil, maple syrup, vanilla extract, and optional coconut extract.
  4. Pour the wet mixture into the dry ingredients and stir until the oats are evenly coated.
  5. Spread the granola in a single layer on a rimmed baking sheet. Bake for 20 minutes total, stirring once at the 10-minute mark.
  6. Add about one third of the chocolate chunks to the granola and bake 5 more minutes. Stir, then turn the oven off and leave the granola inside with the door cracked for about 45 minutes so it hardens into large clusters.
  7. Remove from the oven, let cool completely, break into clusters, and stir in the remaining chocolate chunks.

Storage

Store cooled granola in an airtight container in a dry place. It stays crisp for up to two weeks.
