Don’t knock it until you try it. That phrase stuck with me as I explored recipes for this month’s Pass the Cook Book Club selection from Seoultown Kitchen by Debbie Lee. Sam, the lovely host at Little Ferraro Kitchen, picked three recipes. I could have chosen the wings or the beef — both sounded tempting — but I joined this group to try new things. So I went for the third choice: Spam and Eggs.

When I hear “Spam and Eggs” I picture friendly Hawaiian plate lunches and warm, nostalgic comforts. I also think of the odd cultural reputation Spam has, and I admit I was a little skeptical. But I grew up on canned tuna, hot dogs and other simple proteins, so I decided to set aside any culinary snobbery and give it a fair shot. I bought a can of Spam, went home to test the recipe, and discovered it wasn’t bad at all.

Ingredients

  • 2 tbs vegetable oil
  • 8 eggs
  • Salt and pepper
  • 1 can Spamsliced into 1/4″ pieces
  • 4 cup cooked white ricehot
  • 2 tbs roasted and salted sesame seedsfor garnish
  • 1/2 cup maple syrup
  • 2 tbs chili powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon smoked paprika

Instructions

  • Combine the maple syrup, chili powder, cinnamon, and smoked paprika in a small saucepan. Bring to a low simmer and keep cooking for about 10 minutes until slightly thickened.
  • While the sauce simmers, heat two skillets. In one large skillet over medium-low heat, add the vegetable oil. Crack the eggs and cook sunny-side up, or scramble if you prefer.
  • In the other skillet, cook the Spam slices over medium-high heat for 2 to 3 minutes per side, until browned and crisp around the edges.
  • To serve, divide hot cooked rice among plates, top with eggs and Spam, drizzle the chili-maple sauce over everything, and finish with a sprinkle of roasted sesame seeds.

If you aren’t down with Spam, try ham — it’s a fine substitute.

Ingredients:

  • 2 tbs vegetable oil
  • 8 eggs
  • Salt and pepper
  • 1 can Spam, sliced into 1/4″ pieces
  • 4 cup cooked white rice, hot
  • 2 tbs roasted and salted sesame seeds, for garnish
  • 1/2 cup maple syrup
  • 2 tbs chili powder
  • 1/2 tsp cinnamon
  • 1 tsp smoked paprika

Preparation:

Combine the maple syrup, chili powder, cinnamon, and smoked paprika in a small saucepan. Bring to a low simmer and let cook for about 10 minutes until slightly thickened.

Meanwhile, heat two skillets. In one large skillet over medium-low heat, coat the pan with oil and cook the eggs sunny-side up, or scramble to your taste.

In the second skillet, brown the Spam slices over medium-high heat for 2 to 3 minutes per side until crisp and golden.

Plate hot rice, top with eggs and Spam, drizzle with the chili-maple sauce, and sprinkle with roasted sesame seeds. Enjoy.
