Ingredients
- 1 pound lean beef tenderloin or top sirloin cut into 4 (4 oz) fillets
- ½ teaspoon salt
- ½ teaspoon fresh ground pepper
- 1 tablespoon extra virgin olive oil
- 1½ cup balsamic vinegar
- 3 tablespoons reduced-sugar strawberry preserves, see shopping tips
- 1 cup fresh sliced strawberries
- 4 tablespoons crumbled Gorgonzola cheese, see food facts
- 4 cups spring mix or field greens
Instructions

Season fillets with salt and pepper.

Heat olive oil in a nonstick pan over medium-high heat. Add fillets and sear 2–3 minutes per side for medium. Remove from pan and tent with foil to keep warm.

Add balsamic vinegar to the pan and cook until reduced by half, about 4 minutes. Whisk in strawberry preserves until dissolved.

To serve: Place 1 cup spring mix on each plate. Top with the warm steak, then add sliced strawberries and crumbled Gorgonzola. Drizzle the balsamic reduction over each plate and serve immediately.
