Ingredients

  • 1 pound lean beef tenderloin or top sirloin cut into 4 (4 oz) fillets
  • ½ teaspoon salt
  • ½ teaspoon fresh ground pepper
  • 1 tablespoon extra virgin olive oil
  • cup balsamic vinegar
  • 3 tablespoons reduced-sugar strawberry preserves, see shopping tips
  • 1 cup fresh sliced strawberries
  • 4 tablespoons crumbled Gorgonzola cheese, see food facts
  • 4 cups spring mix or field greens

Instructions

  • Season fillets with salt and pepper.
  • Heat olive oil in a nonstick pan over medium-high heat. Add fillets and sear 2–3 minutes per side for medium. Remove from pan and tent with foil to keep warm.
  • Add balsamic vinegar to the pan and cook until reduced by half, about 4 minutes. Whisk in strawberry preserves until dissolved.
  • To serve: Place 1 cup spring mix on each plate. Top with the warm steak, then add sliced strawberries and crumbled Gorgonzola. Drizzle the balsamic reduction over each plate and serve immediately.
