Remember that Chocolate Brownie Cookies and Cream Freak Shake I shared last week? That over-the-top, indulgent, showstopping creation? Well, today I’m sharing another decadent treat — a healthier take on the internet-famous freak shake that still looks and tastes like a million bucks.
This version keeps the drama and flavor while using cleaner ingredients. It’s rich, creamy and layered with crunchy nuts, brownie pieces and a glossy chocolate sauce. Best of all, this Healthy Freak Shake can easily be dairy free, refined sugar free, gluten free, grain free, vegan and paleo when you select the right ingredients.

Here’s the idea: dairy-free ice cream is folded with coconut cream to create a luxuriously thick base. The glass is then layered with finely ground macadamias and almonds, cubes of brownie, honey or maple syrup (for a vegan option), and generous ribbons of chocolate sauce. The result is a showy, multi-textured shake crowned with brownie pieces and whole nuts.

A quick note: when I say healthy, I don’t mean low-calorie — this is still an indulgent treat, but made with nourishing, minimally processed ingredients.

I’ll admit I was skeptical at first, but the combination surprised me — rich, nutty and chocolatey, it genuinely tastes like an over-the-top dessert. If someone handed this to you and called it a Chocolate Nut Freak Shake, you’d believe them. It’s worth trying.
Assembly is simple and fun. Start by drizzling chocolate sauce around the inside of a large glass so the shake looks as good as it tastes. Add a couple of scoops of dairy-free ice cream, then scatter brownie pieces, a layer of crushed nuts and a drizzle of honey or maple syrup. Add more ice cream, pour in the coconut cream (or coconut milk) — I prefer coconut cream for extra creaminess — and allow the layers to meld.

Finish with extra chocolate sauce, a final drizzle of honey or maple syrup, a sprinkling of crushed nuts and one or two whole brownie pieces and nuts on top. The presentation is indulgent and irresistible — a dessert that looks like it belongs on a movie set but is made from wholesome components.

This shake is dreamy and indulgent — you won’t miss the typical sugary versions. If you want it strictly vegan, use vegan brownies and check labels for dairy-free and gluten-free products as needed. If you don’t need to be strict, feel free to use your favorite ice cream and chocolate and enjoy every decadent sip.

Notes: in my version I used my Paleo Brownies recipe, which is not vegan. If you want a vegan shake, substitute a vegan brownie. Always check labels on ice cream and chocolate to ensure they meet any dietary requirements you need.

Healthy Freak Shake
Ingredients
- 4-5 Scoops Ice Cream, Dairy Free, Vegan, Paleo
- ½ Cup Coconut Cream
- ¼ Cup Almonds
- ¼ Cup Macadamias
- ¼ Cup Runny Honey, or maple syrup
- 3 Pieces of my Paleo Brownies, or other brownies
- 4 Macadamias and almonds for garnish
Chocolate Sauce;
- 125 g Dark Chocolate
- ½ Cup Coconut Cream
Instructions
Chocolate Sauce;

Melt the dark chocolate and coconut cream together until smooth, then allow to cool to room temperature.

Chop two of the brownies into small cubes and crush the almonds and macadamias until fine.

Either mix the ice cream and coconut cream together to make a shake base, or layer them directly in the glass so they melt together.

Line the inside of a large glass with 2–3 tablespoons of chocolate sauce. Place two scoops of ice cream (or half the ice cream/cream mixture) on top.

Add brownie cubes, half the honey or maple syrup, half the crushed nuts and half the remaining chocolate sauce.

Top with another 2–3 scoops of ice cream (or the remaining ice cream/cream mixture) until the glass is full.

Pour the remaining coconut cream over the top so it runs through the layers.

Finish with the remaining crushed nuts, the rest of the honey or maple syrup, and a final drizzle of chocolate sauce.

Garnish with whole almonds and macadamias and a full piece of brownie for a dramatic finish.
