This is one of my family’s all-time favorite dinners!
We love anything with the word “TACO”
So when I made this, it was an instant hit!

You can definitely add extras to this recipe — refried beans would be great!
Also delicious served over rice.
Taco Stuffed Manicotti
Ingredients
- 1 pound lean ground beef
- 1 small yellow onion, chopped
- 2-1/2 teaspoons chili powder
- 1 taco seasoning packet
- 1 tablespoon Adobo
- 1 package (8 ounces) uncooked manicotti shells
- 2-1/2 cups water
- 1/2 cup cream cheese, softened
- 1 jar (16 ounces) salsa
- 2 cups sour cream (16 ounces)
- 2 cups shredded Monterey Jack or Mexican cheese blend (about 8 ounces)
- 1/4 cup sliced green onions
- Sliced ripe olives (optional)
Instructions
- In a large bowl, combine the uncooked ground beef, chopped onion, chili powder, taco seasoning, Adobo, softened cream cheese, and one cup of the shredded cheese. Mix until everything is evenly combined.
- Spoon the beef mixture into the uncooked manicotti shells, filling each shell.
- Arrange the stuffed shells in a greased 13 x 9-inch baking dish in a single layer.
- Combine the water and salsa, then pour the mixture evenly over the stuffed shells.
- Cover the dish and bake at 350°F (175°C) for 1 hour.
- Remove the cover. Spoon sour cream over the top, then sprinkle with the remaining shredded cheese, sliced green onions, and olives if using. Bake an additional 10 minutes or until the cheese is melted and bubbly.
- Serve hot. Enjoy!
