Grilled Strawberry Cheesecake Sandwich Recipe for Summer BBQs

A Grilled Strawberry Cheesecake Sandwich is one of the simplest and most delicious treats you can make. With just a few pantry staples—poundcake, whipped cream cheese, powdered sugar, and strawberries—this dessert comes together in minutes and delivers big on flavor and presentation. It’s versatile enough to enjoy year-round: grilled during warm months or pressed on a panini maker in cooler weather.

This sandwich feels like strawberry shortcake turned up a notch. Using frozen sliced berries in syrup or fresh strawberries macerated with a little sugar gives the filling bright, juicy sweetness. The slightly crisp, golden exterior of the poundcake contrasts perfectly with the creamy, slightly sweetened cream cheese center. Because the ingredients are simple and easy to store—frozen berries, frozen poundcake, and a tub of whipped cream cheese—you’ll be ready to create an impressive dessert whenever you need one.

Grilled Strawberry Cheesecake Sandwich

Ingredients

  • 1 pound loaf frozen poundcake, thawed
  • 2 Tablespoons melted butter, optional
  • 1 tub whipped cream cheese
  • 2 Tablespoons powdered sugar
  • Frozen sliced berries in syrup or fresh sliced berries tossed with a little sugar

Instructions

  1. Slice the thawed poundcake into 8 even slices.
  2. In a small bowl, mix the powdered sugar into the whipped cream cheese until smooth and slightly sweetened.
  3. Spread or place about one heaping tablespoon of the cream cheese mixture onto a slice of poundcake, then top with another slice to form a sandwich. Repeat to make additional sandwiches.
  4. If desired, brush the outside of each poundcake slice lightly with melted butter for extra browning and flavor.
  5. Grill the sandwiches over medium heat for 3–5 minutes per side, or until grill marks appear and the cream cheese filling is warmed through. Alternatively, cook in a panini press until golden and heated.
  6. Top each warm sandwich with sliced strawberries (or warmed frozen berries) and serve immediately.
