Hint: Keep tortilla strips separate from leftovers to avoid sogginess; add them to individual servings right before eating.

Recipe variations and substitute ideas

Here are ways to adapt the soup to your taste or pantry:

  • Taco seasoning — use two packets in place of individual spices for a quicker option.
  • Enchilada sauce — stir in a little for deeper tomato and chili flavor.
  • Low‑sodium broth — choose this to reduce the salt content.
  • Chicken options — boneless skinless breasts work well, but thighs add richer flavor. You can also stir in shredded rotisserie chicken toward the end.

Necessary gear: equipment

A 6–8 quart slow cooker and a large skillet for frying tortilla strips make this recipe easiest.

I used a 7‑quart Crock Pot and a 12″ skillet, but any similarly sized slow cooker and pan will do.
