How To Make the Shrub
1. Place the quartered figs in a nonreactive bowl and cover them with the sugar.
2. Add the balsamic vinegar, stir well so the sugar begins to dissolve, then cover tightly. Let the mixture sit at room temperature on the countertop for 2–3 days.
3. After macerating, mash the fruit gently with a fork or masher to release more flavor.

Storage and Safety
