This homemade cherry vanilla ice cream is made with fresh cherries and an ice cream maker. It’s simple, fresh, and delicious.

Ingredients

  • 3 cups – heavy cream
  • 3/4 cup – granulated sugar
  • pinch of salt
  • 1 vanilla bean – split in half lengthwise
  • 3/4 teaspoon vanilla extract
  • 2 cups chopped fresh cherries, pitted

Instructions

  • In a medium saucepan, pour 1 cup of the heavy cream and add the sugar and salt. Scrape the seeds from the vanilla bean into the pan, then add the pod. Stir over medium heat until the sugar dissolves.
  • Remove from heat and stir in the vanilla extract and the remaining heavy cream.
  • Chill the mixture thoroughly in a covered container (about 25 minutes).
  • Remove the vanilla bean before churning; rinse and reserve the pod for another use.
  • Churn the chilled mixture according to your ice cream maker’s instructions.
  • Add the chopped cherries during the last 5 minutes of churning.
  • Serve immediately for a soft, gelato-like texture, or freeze to firm up and enjoy later.
