When was the last time you curled up in a soft chair with a hot drink, a warm blanket, and a book while rain tapped at the windows and a lamp or candle cast a gentle glow? If it’s been a while, treat yourself soon — that comforting feeling is called hygge (pronounced “hooga”).
Hygge is a Norwegian term meaning well-being. It covers cozy moments, intimate gatherings, gratitude for simple blessings, and quiet togetherness — especially with candlelight and cocoa. Sharing good food is a central part of the experience.
At a true hyggelig dinner, conversations stay warm and kind: no divisive topics, no snide comments, and everyone helps so no one gets stuck with all the cleanup. The focus is on enjoying the present, the food, and the company. We could all use more hygge.
Our regular dinners with close friends embody that spirit — relaxed, friendly, and filled with shared laughter. To bring a little hygge to your week, here’s one of my favorite comfort recipes: Jeff’s Vegetable Beef Soup. It’s like wrapping yourself in a cozy blanket — comforting, flavorful, and easy to make.
Start by cutting 2 pounds of stew meat into chunks and searing them in a large stock pot over medium-high heat until browned. While the meat browns, peel and chop 8 Yukon Gold potatoes into 1-inch pieces. Chop 1 large onion, slice about 12–16 ounces of baby carrots into 1/4-inch rounds, and chop 6 stalks of celery into 1/2-inch pieces. Jeff likes using a bench scraper to move ingredients in the kitchen.
Once the meat is browned, add 4 quarts of water to the pot and scrape up any browned bits from the bottom. Stir in 15 beef bouillon cubes and 2 tablespoons Worcestershire sauce, then add the potatoes, onions, carrots, and celery. Simmer uncovered for 30 minutes.
When the vegetables have softened, break apart 1/2 head of cabbage (green or red) and add it to the pot. Cook uncovered for another 15 minutes so the cabbage softens and the flavors meld. Total cook time is about 45 minutes, which gives the meat a tender texture and lets the flavors marry.
The result is a nourishing bowl full of fall color, fork-tender meat, and deep, comforting flavor — a soup that feels like home and is brimming with hygge.

Next, chop the celery, carrots, and onion and add them when instructed above. The combination of vegetables builds both texture and flavor for a satisfying, hearty soup.

After adding the vegetables and bouillon, let the soup simmer gently so the flavors deepen. If you have red cabbage on hand, it adds a festive color, but green cabbage works perfectly well — use what you have.
Let the soup finish cooking for the full recommended time so the meat becomes tender and the flavors fully develop. When it’s ready, ladle into bowls and savor the warmth and comfort.

In a large stock pot over medium high heat, sear stew meat until browned on all sides.

Add water to pot and scrape bottom to remove the browned bits.

Add beef bouillon cubes, Worcestershire sauce and all vegetables except cabbage.

Cook, uncovered for 30 minutes.

Break cabbage slices apart and add to soup. Cook, uncovered and additional 15 minutes. Serve.
