Who doesn’t love salmon? I certainly do—especially when it’s Lemon Herb Grilled Salmon. I’m not picky: salmon is delicious prepared many different ways, and I enjoy trying varied preparations.

I aim to serve fish to my family at least once a week. One tip: choose wild-caught salmon when possible rather than farm-raised. They may look similar, but wild and farmed salmon can differ in flavor, texture, and nutritional profile.

That said, I’ll buy farm-raised salmon occasionally when it’s convenient. Between Atlantic and Pacific varieties, and even among species, salmon can vary in taste, texture, and color, so I switch depending on availability and preference.

If your salmon is frozen, thaw it before cooking. For a quick thaw, place the sealed package in cool water for about 20 minutes. Once defrosted, cook it right away or refrigerate until ready to use.

Simple recipe for lemon herb-grilled salmon that’s flavorful and quick to prepare.

Ingredients

  • 1 1/2 pounds salmon with skin
  • 1/2 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, softened
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons freshly chopped dill
  • 1 teaspoon freshly chopped parsley
  • Lemon slices for garnish

Wood pellets:

  • Mesquite or hickory

Instructions

  1. Preheat the grill to 325°F with the lid closed for about 15 minutes.
  2. Mix lemon zest, lemon juice, softened butter, dill, parsley, sea salt, and black pepper until well combined.
  3. Spread the mixture generously over the top of the salmon fillet and top with lemon slices. You can let it sit for about 10 minutes to let the flavors meld.
  4. Place the salmon on the hot grill grate, skin-side down.
  5. Grill for 20 to 25 minutes, or until the internal temperature reaches 145°F and the fish flakes easily with a fork, or cook to your preferred doneness.
  6. Serve with extra lemon slices and, if you like, a garlic-butter dip.

Notes

Oven cooking times vary with thickness. For a thick fillet, bake at 400°F for about 25 minutes. For a standard fillet, 15 minutes or until the salmon flakes easily with a fork is usually sufficient.
