    (pulled & shredded)

    medium zucchinis
    (diced)

    box Stove Top chicken stuffing mix
  • 1/2
    cup
    butter
    (melted)
  • 1
    (10 oz)
    can cream of chicken soup
  • 1/2
    cup
    sour cream

Instructions

  • Preheat the oven to 350° F and grease a 9×13-inch baking dish.
  • In a large bowl, melt the butter and stir in the dry stuffing mix. Reserve half of this mixture for the topping.
  • Add the shredded chicken, diced zucchini, cream of chicken soup, and sour cream to the remaining stuffing mixture. Mix until well combined.
  • Spread the mixture evenly in the prepared baking dish, then sprinkle the reserved stuffing mixture over the top.
  • Bake uncovered on the middle rack for 35–45 minutes, until heated through and the top is golden brown.

Notes

  • You can substitute about 3 cooked, cubed chicken breasts for the rotisserie chicken; season them lightly with salt, pepper, and garlic powder. Canned chicken also works in a pinch.
  • Add other soft vegetables if you like, such as yellow squash, corn, or mushrooms.
  • Do not cook the boxed stuffing before using. Simply mix the dry stuffing mix with melted butter. No extra steps required.
