Hi — it’s Dee from Meatloaf and Melodrama. If you love fast, fuss-free dinners, sheet pan meals are a go-to for busy nights. They’re simple to prep, full of flavor, and require minimal cleanup. This dill chicken sheet pan dinner is one of those favorites that comes together in about 30–40 minutes and fills the kitchen with an irresistible aroma.

This recipe is a lighter change from heavy autumn and winter comfort foods while still packing plenty of flavor. Preparation is straightforward: mix fresh dill into mayonnaise with a few seasonings, spread it over the chicken, and roast everything on one pan alongside fresh vegetables.

Mayonnaise keeps the chicken juicy, while dill brings a bright, herby note. If fresh dill isn’t available, dried dill can be substituted—just keep in mind dried herbs are more concentrated, so use a bit less. One of the joys of sheet pan dinners is the flexibility: use the vegetables you and your family prefer. Here I use carrots and broccoli, but potatoes, Brussels sprouts, or green beans all work well.

Because broccoli cooks quickly, the chicken and carrots roast first, and the broccoli is added for the final few minutes so everything finishes at the right texture. When it’s done, you’ll have a simple, flavorful meal with minimal effort and cleanup.
