Ingredients
- 2 Each Chicken Breasts
- 2 (10 oz) Cans Tomatoes with Chilies
- 1 Each Yellow Onion diced
- 4 Cloves Garlic minced
- 1 (15 oz) Can Whole Kernel Corn drained and rinsed
- 1 (15 oz) Can Black Beans drained and rinsed
- 4 Cups Chicken Broth
- 1 teaspoon Ground Cumin
- 2 teaspoons Smoked Chipotle Chili Powder
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 6 Each Corn Tortillas
- ¼ Cup Vegetable Oil for frying
Instructions

Add all ingredients (chicken, tomatoes with chilies, onion, garlic, corn, beans, and spices) to the slow cooker.

Pour in the chicken broth to cover the ingredients.

Stir lightly, cover, and cook on low for 6–8 hours (or on high for 4–6 hours) until the chicken is cooked through and flavors meld.

Remove the chicken breasts and shred with two forks, then return the shredded chicken to the pot and stir to combine.

Cut the corn tortillas into strips and fry lightly in hot oil until golden and crisp. Drain on paper towels. Serve the soup topped with tortilla strips and your favorite garnishes.
