This recipe uses 3 lbs of chicken, which yields generous portions and great leftovers. For that quantity I recommend a 5+ quart crockpot (a 6-quart slow cooker works well). If you prefer fewer leftovers or are cooking for two to three people, halve the recipe and use a 4-quart crockpot instead.

  • 6 Qt Crockpot

Ingredients

  • 3 lbs boneless skinless chicken breasts or skinless chicken thighs
  • 1 1/2 tablespoons taco seasoning
  • 1 bell pepper seeded and sliced
  • 1 medium onion sliced
  • 8 oz fresh mushrooms sliced (optional)
  • 1/4 Cup butter
  • 10 Slices pepper jack cheese

Instructions

  • Place the chicken in the bottom of a 6-quart slow cooker and sprinkle with taco seasoning.
  • Top with sliced bell pepper, onion, and mushrooms if using.
  • Cut the butter into small cubes and scatter them over the top.
  • Cook on low for 4–6 hours, or until the chicken is cooked through and tender.
  • Shred the chicken or leave breasts whole. Top with pepper jack cheese slices and cook on high for about 10 minutes, until the cheese melts.
  • Serve hot and enjoy.
