Finding a reliable Keto/Low Carb slow cooker recipe can be a challenge. Try this flavorful Crockpot Pepper Jack Chicken for an easy weeknight dinner.

The slow cooker is a lifesaver on hectic days. Tossing ingredients into the crockpot in five minutes and walking away makes dinner simple. Hours later you’ll come back to tender, seasoned Crockpot Pepper Jack Chicken that’s ready to serve. It’s full of flavor and versatile — perfect atop a salad, over cauliflower rice for a low-carb meal, or used in tacos, sandwiches, or burrito bowls.
What Size Crockpot
This recipe uses 3 lbs of chicken, which yields generous portions and great leftovers. For that quantity I recommend a 5+ quart crockpot (a 6-quart slow cooker works well). If you prefer fewer leftovers or are cooking for two to three people, halve the recipe and use a 4-quart crockpot instead.

Low Carb / Keto
This dish is naturally low carb and keto-friendly, made mainly from chicken, vegetables, butter, and cheese. It pairs perfectly with a fresh green salad or cauliflower rice for a satisfying, low-carb dinner.
What to Serve with Crockpot Pepper Jack Chicken
This chicken is delicious on its own with a side salad, especially for low-carb or keto meals. If carbohydrates are fine for your menu, serve it with rice and beans, pile it into tacos, or use it to fill sandwiches. The combination of chicken, peppers, onions, and melty pepper jack cheese is versatile and crowd-pleasing.
