Equipment

  • Typhur Sync Air Fryer
  • Typhur wireless meat probe
  • Butcher’s twine
  • Sharp knife
  • Cutting Board
  • Small bowl
  • Spoon

Ingredients

For the Picanha Pinwheel

  • 3.5 LBS Whole Picanha Roast
  • 2 tablespoons Kosher salt (estimated)
  • 1 tablespoon Black pepper (estimated)
  • 2 tablespoons Dad Dust Seasoning (estimated — 50% granulated garlic, 50% granulated onion, splash of MSG)
  • 1 tablespoon Wagyu beef tallow spray (estimated)

For the Garlic Herb Butter

  • 1 cup Unsalted butter, softened
  • 2 tablespoons Fresh rosemary, finely chopped
  • 2 tablespoons Fresh sage, finely chopped
  • 1 tablespoon Fresh thyme, finely chopped
  • 2 tablespoons Garlic, minced
  • 1 teaspoon Salt, to taste

For the Potatoes

  • 3 LBS Potatoes, chopped
  • 3 tablespoons Olive oil or garlic-infused olive oil
  • 1 tablespoon Salt, to taste

Instructions

Prepare the Picanha

  • Trim the fat cap slightly to make it manageable, leaving some fat for flavor. Butterfly the picanha open like a book without cutting all the way through. Season the inside generously with kosher salt on both sides and set aside while you prepare the butter.

Make the Garlic Herb Butter

  • Soften the butter. Finely chop rosemary, sage, thyme, and garlic. Mix the herbs and garlic into the butter and season with salt.

Build the Pinwheel

  • Spread a generous layer of garlic herb butter over the inside of the picanha. Season with black pepper and Dad Dust. Roll the meat tightly into a pinwheel and secure with butcher’s twine. Season the outside lightly with Dad Dust and spray with Wagyu beef tallow.

Cook in the Typhur Sync Air Fryer

  • Insert the Typhur wireless probe into the center of the roast. Place the pinwheel on its side so the probe fits without touching the top. Set the air fryer to 250°F (121°C). Cook until the internal temperature reaches 118°F (48°C) to allow room for a final high-heat sear.

Sear and Rest

  • Remove the roast and increase the heat to 450°F (204°C) to create a hot sear and build exterior crust. Let the air fryer preheat for about 5 minutes before returning the roast to sear. Once finished, remove and rest for 15 to 20 minutes before slicing into pinwheels.

Air Fry the Potatoes

  • While the beef rests, toss chopped potatoes with olive oil and salt. Air fry at 400°F (204°C) until tender and crispy, about 20 minutes, shaking halfway through.

Slice and Serve

  • Remove the twine, slice into pinwheels, and serve with the air fryer potatoes.

Top Tip

  • Cooking the picanha to 118°F before the final sear gives you precise control over doneness and lets the Typhur Sync Air Fryer’s probe and app do the hard work for you.

Picanha is a cut often served as steaks at Brazilian steakhouses, prized for its fat cap and rich beef flavor. This recipe takes a different approach: the roast is butterflied, seasoned generously, and rolled into a pinwheel. That technique creates attractive, uniform slices perfect for a holiday table and helps keep the meat juicy.

Why a Picanha Pinwheel Works for the Holidays

A picanha pinwheel checks many boxes for holiday cooking. It looks impressive when sliced, feeds several people easily, and stays juicy because the fat and butter are rolled inside the meat. Most importantly, the format gives you control over doneness from edge to edge.

Rolling the beef traps garlic herb butter inside the roast; as it melts, it carries flavor through the pinwheel. The result is rich, well-distributed flavor without complicated finishing steps. Each slice shows layers of beef and herbs that look intentional while remaining simple to prepare.

Cooking one roast instead of multiple steaks also makes timing easier. You’re working with a single piece that’s less likely to overcook in spots, which is helpful when you’re juggling sides and guests.

Using the Typhur Sync Air Fryer for a Picanha Pinwheel

The Typhur Sync Air Fryer is central to why this method runs smoothly. Beyond hot air and a basket, the built-in wireless probe and app control give precision that matters when cooking a thick roast.

The target internal temperature for this cook is 118°F (48°C). That intentionally leaves room for a final high-heat sear while ending up in a perfect medium-rare range. Using the probe removes guesswork — you’re not relying on time or opening the unit to check doneness.

The probe syncs with the air fryer and the app so you can monitor the cook. When the target temperature is reached, increase heat to build a crust. That control turns the air fryer into a true cooking tool rather than just a convenience appliance.

Another practical advantage: the Typhur Sync can fit a full picanha pinwheel, so you’re not limited to small portions. This unit can handle a serious main course for holiday entertaining.

Flavor Without Overcomplicating the Recipe

This picanha pinwheel keeps seasoning simple on purpose. Kosher salt forms the foundation, black pepper adds bite, and a simple Dad Dust blend (garlic, onion, touch of MSG) boosts savory notes without overwhelming the beef. The garlic herb butter does most of the heavy lifting.

Rosemary, sage, thyme, and garlic mixed into softened butter provide a classic holiday profile that’s familiar and comforting. Rolled inside the beef, those flavors melt and distribute during cooking for consistent richness.

A light spray of Wagyu beef tallow on the exterior helps with browning and adds depth of beef flavor, supporting the final sear to create a crisp crust while keeping the interior tender.

Why This Picanha Pinwheel Is a Smart Holiday Choice

Holiday meals come with pressure: guests expect something special that’s ready on time. This picanha pinwheel delivers an eye-catching centerpiece while keeping the process predictable. Cooking in the Typhur Sync Air Fryer avoids weather, flare-ups, and uneven heat so you can focus on sides and company.

Letting the roast rest 15 to 20 minutes after searing ensures clean slices and even juices. Serve the pinwheels with air-fried potatoes cooked at 400°F (204°C) for a complete holiday meal prepared with a single appliance.

A New Take on a Classic Cut

This picanha pinwheel honors the character of a classic cut while adapting it for modern home cooking. It respects the beef, leans into flavor, and uses technology to make the process easier, not gimmicky. If you want a holiday meal that feels different without being risky, this delivers bold flavor, clean presentation, and repeatable results.

This is the kind of recipe that can move from a once-a-year centerpiece into regular rotation.
