
Almond Joy Brownie Bites
These fudgy Almond Joy Brownie Bites are perfect for parties, holiday trays, or a simple treat at home. They combine boxed brownie mix, sweetened flaked coconut, sweetened condensed milk, and almonds to create bite-sized desserts that bake in a mini muffin pan—about 48 bites per batch.
The recipe is straightforward and uses common pantry ingredients. If a full 48 bites feels like too many, make a smaller brownie mix (8×8 instead of 9×13) or freeze extras for later. Sweetened condensed milk freezes well, so leftover cans can be saved for future recipes.
Origin of the Recipe
I first made these in 2013 after a request from my father-in-law, Denny, who loved coconut and chocolate. He often received Almond Joy bars from my kids at Halloween and asked me to recreate those flavors in a bite-sized brownie. Making these became a way to celebrate his favorite combination. When we lost Denny in 2018, those flavors became a warm reminder of him.
How to Make Almond Joy Brownie Bites
Follow these steps for consistent, delicious results:
- Prepare mini muffin cups with non-stick cooking spray.
- Prepare the brownie mix according to package instructions and fill each muffin cup about half full.
- Bake according to package directions; mine baked in about 15 minutes.
- Remove brownies from tins and press an almond into the top of each warm brownie.
- While brownies cool, combine sweetened condensed milk and sweetened flaked coconut in a bowl.
- Form small balls of the coconut mixture and press one onto each brownie. Freeze the assembled bites for about 30 minutes so the coconut is firm.
- Melt chocolate almond bark or candy coating according to package directions.
- Dip the tops of the chilled brownie bites into the melted chocolate. Place on a cookie sheet lined with waxed paper and refrigerate until the chocolate sets.

Tips: Use a cookie scoop for uniform coconut balls. Press almonds into warm brownies so they adhere. Work in batches—keep most bites in the freezer and dip a dozen at a time so the coconut stays firm and doesn’t sink into the chocolate.
